The perfect pancake recipe for Mother's Day breakfast in bed

Mother's Day is the perfect opportunity to show our mothers how much we love and appreciate them. What better way to make them feel special than by serving them a delicious breakfast in bed? And what breakfast could be better than a stack of fluffy pancakes? 

Here is a simple yet scrumptious pancake recipe that is sure to impress your mum and make her feel loved:

Ingredients:

1 1/2 cups all-purpose flour

3 1/2 teaspoons baking powder

1 teaspoon salt

1 tablespoon white sugar

1 1/4 cups milk

1 egg

3 tablespoons butter, melted

1 teaspoon vanilla extract

Directions:

In a large mixing bowl, sift together the flour, baking powder, salt, and sugar.

In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix the batter, as this can lead to tough pancakes.

Heat a non-stick pan or griddle over medium heat. Once hot, scoop 1/4 cup of batter onto the pan for each pancake.

Cook until the edges start to look set and bubbles appear on the surface of the pancake, then flip and cook until golden brown on the other side.

Serve the pancakes hot, topped with your mum's favourite toppings such as fresh berries, whipped cream, or maple syrup.

Tips:

To make your pancakes even fluffier, separate the egg yolk and white, and beat the egg white until stiff peaks form. Then, fold the beaten egg white into the batter just before cooking.

If you want to add some extra flavour to your pancakes, try adding a dash of cinnamon or nutmeg to the dry ingredients.

Remember to serve your mum her pancakes in bed with a hot cup of coffee or tea, a vase of fresh flowers, and a heartfelt card expressing your love and appreciation for all that she does. This small gesture will surely make her day and show her just how much you care.
